Summary: With current trends, the old bakeries now named also as bakeries and confectioneries, are modernizing and evolving to convenience product centers, gastronomic centers with products of the most varied flavors and with increasingly differentiated services. With the current scenario it is possible to say that it is an economically stable sector and in constant growth (APIB, 2017).
