Empirically, it is known that the relationship “woman in the kitchen” and “man in the kitchen” are configured differently in society. Therefore, it is worth mentioning that the devoted kitchen, cooking for the other, the sensitive kitchen is closely linked to the woman while the professional, virile and exhaustive kitchen is linked to the man. The reinforcement of the social places that women are historically destroyed is necessary for the sense of the historical processes that exclude women from the professional kitchen. This work analyzes the representations of the kitchen professionals about the professional women of the gastronomy. A study was carried out based on a historical panorama of the sexual division of labor, of the kitchen as a place of female speech and of the route of professionalization of gastronomy with the intention of understanding the social representations that surround the universe of the gastronomic labor market. Through a semi-structured interview with complementary professionals with signed menus in the city of Recife, the repercussion of social representations on female occupation in professional kitchens was analyzed. We observed that the professional kitchen is mostly a male space, where social representations feedback, creating and creating difficulties for the insertion and permanence of women in their spaces. |
