The effect of replacing corn by alternative energy ingredients on carcass characteristics, leg tissue composition and meat quality of sheep Santa Ines, were studied in two experiments, both performed in the Laboratory Evaluation of Food with Small Ruminants II, Department of Animal Science of Universidade Federal Rural de Pernambuco. In each experiment were used 40 non castrated male sheep, that were slaughtered after 70 days of confinement. In experiment 1, the corn was replaced by Manipueira in 0; 25; 50; 75 and 100%. In experiment 2, the corn was replaced by corn germ meal in 0; 25; 50; 75 e 100%. When manipueira replaced corn there was a quadratic effect on intake of dry matter and total digestible nutrients, while the crude protein intake, body weight at slaughter, carcass weights, yields hot housing and commercial area and eye-loin decreased linearly. The loss by cooling increased linearly according to the replacement. The weights of all meat cuts decreased linearly, however the yield of the same has not been changed. There was a linear decrease to the rump width and carcass and leg compactness index. The weights of the tissue components of the leg decreased with the replacement as well as the percentage of muscles, the muscle:bone ratio and muscularity leg index. The percentage of bones increased linearly according to the replacement. The moisture content of meat increased, while the crude protein and ether extract decreased linearly. There was a quadratic effect for shear force with minimum force of 2.78 kg / cm ² when manipueira replaced corn at 54.25%. There was a quadratic effect for C15:0 (0.37 estimate when replacement was 46.25%) and C17:0 (1.30 estimate when replacement was 68.50%), a linear increase for C18: 0 and decrease for C22:0. About the monounsaturated fatty acids, the C14:1 and C20:1 n9 decreased, while the C18:1 n11 increased linearly. For C15: 1 observed a quadratic effect, with an estimate of 1.48 when the replacement was 26.75%. For polyunsaturated fatty acids, there was a quadratic effect for C18: 2 9c 11t, with estimated maximum of 0.60 when replacement was 36.66%. Relations polyunsaturated:saturated and ω6:ω3 decreased linearly with the substitution. In experiment 2, the intakes of dry matter, crude protein and total digestible nutrients decreased linearly with the substitution, as well as the carcass weights and yields, longissimus muscle area, weights of commercial cuts and tissue components of the leg. There was an increase in the final pH of carcass, without effect on the initial pH and the initial and final temperatures. The yield of meat cuts, the percentage of muscle and fat of leg and muscle:fat ratio were not affected by the replacement. The percentage of bones and other tissues of the leg increased linearly. The relations muscle:bone, subcutaneous fat:intermuscular fat and muscularity leg index decreased linearly with the replacement. There was no influence on the chemical composition and physico-chemical parameters of meat, except the water holding capacity, which increased linearly with the replacement. There was no effect on total saturated fatty acids (SFA), but there was a linear decrease for total monounsaturated fatty acids and linear increase in the total polyunsaturated fatty acids (PUFA). Relations PUFA:SFA and ω-6: ω-3 increased with the replacement. |
