Desenvolvimento e avaliação de embutido tipo linguiça frescal de bagres marinhos (Sciades herzbergii - Bloch, 1794) armazenadas sob baixas temperaturas

Resumo: The marine catfish (Sciades herzbergii), species of fish found in Brazil, represent a wide distribution in tropical and subtropical waters, including marine environments, esturary and lacustrine. They are characterized as fauna that is a sidekick of the fishing and other species, withlow commercial value. Therefore, there is a grat interest in aggregating value to that fish in the form of other commercial products, such as sausages. The aim of this study was to develop and evaluate aspects of quality and stability of some built-in products like fresh sausages of marine catfish stored under low temperatures (6oC ou -20 oC). Sausages show 59.59% of humidity, 18,98% of protein, 11,59% of lipid, 3,02% of ash and they were well accepted (“I like it moderately) with acceptance index of 82,7 to 90,2% and buying intention of “I would probablly buy it”. During 28 days of warehousing under cooling the lipid oxidatoin (P<0,05) , (0,7 to 1,6 mg of malonaldehyde /kg), nitrogeneous volatile basis (13,6 para 42 mg N/100g) increased; the capacity of water retention diminished (82,4 to 75%) and the pH varied from 6,4 to 6,0 in the 14 first days and increased to 6,4 on the 28th day. The luminosity (L*) and intensity of yellow (b*) were stable, 61,7 e 10,6, respectively and the intensity of red (a*) increased from 7,3 to 8,1. There was a presence of Salmonella, positive Staphylococcus coagulase were <2 log UFC/g and E. coli increased from <2 to3,7 log UFC/g. In stored sausages, frozen for 4 months, the lipid oxidation (P<0,05) increased (0,45 to 0,71 mg of Malonaldehyde kg) and volatile nitrogeneous basis (12,2 to16,5 mg N/100g). The capacity of water retention (85%) and pH (6,1) did not vary. The values of L*, a* and b* diminished from 62,9 to 56,8; 7,7 to 4,5 and 10,7 to 7,8, respectively. There was not any presence of Salmonella, however E. coli and positive Staphylococcus coagulase positiva were <2 log UFC/g. It could be observed that the marine catfish sausages showed a good nutritional quality, and also sensorial. Their shelf life is around 21 and 25 days, when kept under cooling and 4 months under freezing.
