This study aims to evaluate the quality controls involved in broiler handles in the field and at the slaughterhouse in order to identify the uncertainties involved in these processes and that can interfere with asset quality chicken cut. handles in the field and at the slaughterhouse and the reflection of this step in the quality of the final product (broiler) in the light of Economy of Transaction Costs were analyzed. The study is predominantly qualitative, and uses the interview method not structured to capture the uncertainties with respect to agribusiness expectations for broiler quality standards and the level of knowledge of producers about this regard. Interviews were conducted with producers integrated into one factory of western Paraná and also with the managers of this agribusiness. The selected sample was intencional given the homogeneity of the population, covering 10% of producers. With the data analysis was performed from the perspective of theory of transaction costs, considering the maintenance costs of contracts, quality control monitoring and other costs involved when there is loss of control of the process. The study identified the uncertainties in the analyzed system, which it was the issue of research. |
