Resumo: This work presents a study about Germanic immigration to Agudo, the preservation of practices in the preparation of typical foods and how and who preserves the knowledge of these recipes. Agudo is a municipality located in the central region of the state of Rio Grande do Sul, with the characteristic of promoting events involving typical food to highlight Germanic culture. Therefore, the present work aims to identify the heritage produced from typical food in the municipality of Agudo/RS as well as understand the deterritorialization and reterritorialization experienced by these immigrants. It aims to verify how food helped in the re-territorialization process and in the construction of the individual's identity in the process of feeling like they belong to the new group in a new territory. Furthermore, it aims to identify which existing typical dishes come from the Germanic culture in Agudo and which cultural interferences and local ingredients were/are part of the preparation of this food, however, without modifying the essence of the original recipe and the meanings it conveys. from its preparation to the act of feeding. The research also aims to identify the owners of the recipes for these dishes and to verify how this knowledge is preserved and how it keeps Germanic culture alive within the family and in the community in which it is located.
