The aim of this research was to analyze Tommy Atkins mangoes nutritional potential, arising from Aracaju-SE Supply Center disposal, at the preparation of cereal bars. Residues of these fruits, mangoes and mangoes peels were dried in solar and trays dryer at 60 ° and 70 ° C of temperature, crushed and stored until the analysis begins. Mangoes flour samples and mango peels obtained in a tray dryer at the two temperatures found themselves fit for consumption, while those obtained in solar dryer were discarded for consumption due to contamination by Bacillus cereus. Mangoes Flours and mangoes peels obtained by the lowest drying temperature (60 ° C) were chosen for the preparation of cereal bars due to better conservation of most nutrients, besides favoring a lower energy consumption compared to mangoes flour and mangoes peels obtained with the highest drying temperature (70°C). All formulations of cereal bars obtained through the experimental design and the standard bar were fit consumption and had a good consumer acceptance. The optimized formulation for bars was 20% mango flour and 18% mango peel flour replacing whole oats. The reuse of mangoes waste used in the preparation of cereal bars allowed to obtain a product (optimized bar) protein source, rich in dietary fiber, low in fat and very low in sodium, maintaining its sensory quality and possibly being consumed within 60 days of storage under appropriate conditions of temperature and packaging. The partial replacement of oat flour to mangoes waste could result in a cheaper product, add value to these by-products and reduce waste of these foods as well as being an alternative that avoids these wastes disposal into the environment. |
