Resumo: In order to improve the quality of poultry meat for the population, studies on the environmental and sanitary management, from the arrival of the establishment to the production sectors, have been intensified for the existence of a final quality product. Studies are conducted even before the farm is inserted, such as the place of production, artifacts that will be used, batch with aptitude, and even the community environment. In Sergipe, poultry activity is widespread in most regions, with a significant number of poultry. The general objective of this research was to evaluate the operation process of the Agropec Alimentos farms and slaughterhouse food, in Lagarto, SE and Estrela, in Maruim, SE until slaughter, according to health quality standards using sustainability indicators. The methodological procedures related to this research include describing the process of raising broilers at the two farms in the State of Sergipe, from chicks to slaughter; To compare the process of raising broiler chickens in the studied farms with sanitary quality standards, with site visits; Analyze the perception of the community in the surroundings of the farm in relation to the impacts of this activity, with interviews; To select sustainability indicators, which were pressure / state, impact / effect and response, to evaluate the process of raising broiler chicken in these farms, aiming at improving the process regarding the normative instructions for raising broiler chicken. The results showed that the farms studied are within the sanitary standards and according to the expected quality. The interviews also revealed that, the fairs support the presence of farms in the municipality and that they do not cause any kind of environmental impact.
