This research aimed to obtain a guava pulp powder added albumin by drying method foam layer. This method involves a greater contact surface between the product and the hot air due to the foam formed, which makes fast drying process. First, we checked the physicochemical characteristics of the pulp used. Then, there was a complete experimental design (CCRD), with the independent variables (time, albumin concentration, temperature) relating them to the response variables (hygroscopicity, ascorbic acid, moisture, yield, color parameters: L*, a*, b*) for selecting the drying condition. The condition was chosen: 78.5 ° C, 331.5 min., 5.1% albumin. In powders produced the following analyzes were performed: titratable acidity, pH, soluble solids, humidity, ascorbic acid, reducing and total sugars, color parameters (L *, a *, b *), solubility, hygroscopicity. Analyses were performed for the powder stability in the chosen condition every 15 days for 90 days. The scanning electron microscopy was performed to analyze the post of structures in 4 concentrations and 8% albumin. For the same concentrations were made shear stress analysis, compaction density and wall friction angle, as well as assessed the flow of powders. Mathematical models were adjusted to describe the adsorption isotherms and drying kinetics. The study of the stability of guava pulp powder has observed increased humidity and coordinate b *, the decrease in pH, hygroscopicity, L* and a* and titratable acidity remained stable. For kinetic drying of guava pulp added albumin, the best fit model with high and low coefficients of determination errors was the estimated average Midilli. For the post of adsorption isotherms, the best model was the GAB with estimated average error below 10%. The results of the physical tests were made for powder concentration to 4 and 8% albumin in which it was found that the guava pulp powder 8% albumin showed a tendency to free-flowing, with a wall angle of friction low greater shear rates and higher density with respect to the powder to 4% albumin. In scanning electron microscopy, it was found that the post has irregular shapes and rough surface. In general, it can be concluded that with the drying method foamed layer gave a guava pulp powders having satisfactory physical characteristics and physico-chemical properties. |
