Resumo: SANTOS , ACI . Actions to promote proper and healthy meals taken in private schools of alagoas. 2014. Dissertation (Masters in Nutrition ) - Graduate Program in Nutrition , Faculty of Nutrition , Federal University of Alagoas , Maceió , 2014. This dissertation was carried out based on a subproject linked to an investigation entitled “Evaluation of the realization of the Human Right to Adequate Food among public and private elementary school students in the state of Alagoas” approved by the Research Ethics Committee of the Federal University of Alagoas (case no. 017299 / 2011-43). The objective was to characterize the activities to promote adequate and healthy food (PAAS) in private elementary schools in Maceió. Directors, coordinators and teachers (responsible for PAAS) from 41 randomly selected establishments (41/220) were interviewed. Most of the coordinators stated that PAAS was included in the school's Political-Pedagogical Project. Only five of these coordinators were able to locate such document and make it available for analysis, in which no such statement was found. Most of the teachers were pedagogue, did not study food and nutrition at graduation or underwent training afterwards, and understood Food and Nutritional Security as "hygienic-sanitary security". Sixteen different PAAS activities were identified in schools, the most cited being "cultural/scientific fair" and lectures. There was no regulation or professional orientation for the operation of the canteens, which occurred under the exclusive responsibility of their owners. It is concluded that PAAS activities in private schools in Maceió occur in a heterogeneous and non -systematic way. There is no regulation or professional support regarding the operation of canteens to ensure that they provide healthy eating alternatives. The lack of training in food and nutrition for teachers and the lack of specific planning are obstacles to greater effectiveness of PAAS in these schools. This situation represents a serious risk to the health of the students.
