Resgate da panc Stachys byzantina: avaliação da cinética de secagem e atividade antimicrobiana do óleo essencial e hidrolato da parte aérea

Resumo: Stachys byzantina K. Koch, popularly known in Brazil as "garden fish, lungwort or rabbitear", belongs to the Lamiaceae family, is an unconventional food plant (Panc) with increasing application in human nutrition and widely used as a medicinal herb in treatment of respiratory problems as its leaves demonstrate efficacy for lung fortification, studies have shown that this plant has different biological activities such as antioxidant, anti-inflammatory action, potential anti-Alzheimer, antidiabetic, anti-obesity and microbiological inhibition. To meet the needs for information and evaluating existing research on results presented by this plant, and also due to the importance of rescuing unconventional food plants, capable of presenting different applications in natura form, for food, and after drying, for teas and medicines, as well as the essential oil obtained from it, which may have industrial applications, the chemical composition of the essential oil (volatile secondary metabolites) and hydrolate were studied and submitted to the analysis of drying kinetics and antimicrobial activity of the samples. About the drying kinetics, three temperatures 40, 60 and 80 °C were evaluated, whose best fit model was the logarithmic one where coefficient of determination (R2) 0.9995 and the Chi-Square (χ2) 0.0007, the activity antimicrobial agent against the 5 microorganisms tested showed inhibition for Listeria both for the essential oil (0.9 cm) and for the hydrolate (1.0 cm), both from the extraction carried out by steam dragging with dry leaves at a temperature of 80 °C. The chromatographic analysis showed in its chemical composition epi-Cubebol (82.36%) as the major compound, followed by -Eudesmol (1.65 %), 8-α-Acetoxyelemol (0.79%) and Limonene (0.67 %), all other compounds were below 0.50 %. The results obtained in this study showed inhibition for Listeria, such results may guide future work with the application of this material industrially, in household cleaning products or biodegradable films for cheese manufacturing.
