This study investigated the behavior of the chemical composition, somatic cell counts and microbial counts of raw milk inspected by the State Service in three states in the Northeast (Pernambuco, Paraiba and Rio Grande do Norte) in the years 2007 to 2009. The data used in the analysis were acquired from bulk tank milk samples collected from properties that have registered at the State Inspection Service (SIE). 2.550 samples were used to perform the analysis of chemical composition, somatic cell count (CCS), somatic cell score (ECS), total bacterial count (CBT) score and total bacterial (EBT). Statistical analysis was processed using the PROC GLM, PROC CORR and applied the Tukey test at 5% probability (SAS, 2007). The year 2009 had the highest average for fat, protein, lactose and total solids, 3.71%, 3.27%, 4.49% and 12.11% respectively. In relation to the states during the three years of evaluation Rio Grande do Norte had higher averages for fat, lactose and total solids, 3.77%, 4.38% and 12.20% respectively, and Pernambuco had higher levels of protein ( 3.31%). To CCS and ECS the highest averages occurred in Rio Grande do Norte 729,000 and 5.86 respectively. To CBT and EBT for the highest averages were found in Paraiba that were 1103.000 and 6.04 respectively. The correlations between CCS, ECS, CBT, EBT and milk components showed different responses and most often significant. The results are consistent with those established by IN51. |
