The purpose of this study is to examine the kitchen afrobrasileira through the offices assigned to the kitchen for various social groups in the city of Recife and the mechanisms to withstand the adversities encountered over time. The temporal focus of the work is located in the decades of twenty, thirty and forty of the twentieth century, as the period of greatest political and social effervescence, flows in tumultuous events for the black culture. Thus it was necessary to find the start of this kitchen, since its entry into an already mixed in the cooking-houses of the great engines of sugar cane, when the Indian away from this letter. In the period of growth of towns and the urban slave wins new attributes, and will do in domestic kitchens and sell on the streets of Recife and its region quitutes; to consolidate the third point of the kitchen came the African matrix Xangô, worship afrobrasileiro characterized the large quantity of food, as it works through the animal and vegetable offerings to deities. Entry into the house-wide, sales in the streets and Xangô are the mechanism through which the power developed in the black society Pernambuco. In the twentieth century Recife is a major economic centers of the country, the consumption of mass culture and a foreign company dominates the Recife. From 1926 Gilberto Freyre and other intellectuals develop the regionalist manifesto, one against the invasion of outsiders fashions, which placed the kitchen black as regional identity, of local culture as well as the First Negro Congress, 1934, happened in Recife, Freyre organizes dinners on the terraces Xangô, showing a rich cuisine and Pernambuco. In worship afrobrasileiro called Xangô Pernambuco in the food represents power, communication, community, nutrition, replacement ... Many representations. In 1937 the government of Pernambuco took theintervenor Agamenon Magalhães, until 1945 the Xangô and any black cultural expressions were mercilessly hunted. The food was represented as african dirty and late.
