Resumo: The implantation of the prerequisites ones of the Program of Hazard Analysis and Critical Control Points (HACCP), Good Manufacturing Pratices (GMP) and the Sanitation Standard Operating Procedures (SSOP), is basic to supply the necessary basic operational and ambient conditions the innocuous and healthful food production. In this context, the gauging of the functioning of these prerequisites ones was effected through microbiological analyses of equipments and carcasses harvested in two slaughter house, located in the states of Mato Grosso and Rondônia. The study of the hygienically-sanitary conditions of the samples they had been carried through the analysis of Total count mesofiles aerobic microorganisms and Enterobacteriaceae. The two slaughter house presented results of Total count of viable microorganisms and Enterobacteriaceae on carcasses as microbiological criteria required by existing legislation. The microbiological analysis of the equipments showed that occurred as the consolidation of programs of quality and training of officials of the team for hygienisation, there was a tendency to call the microbiological criteria, as was evidenced during the last three months of research. Through the implementation of programs for pre requisite GMP and SSOP and maintenance of microbiological criteria to assure the safety of the final product, the two slaughter house were entitled to the Export Market.
