Resumo: | The sugarcane distillate to be considered cachaça or sugarcane aguardente must comply with the parameters established by the Normative Instruction number 13, June 30th, 2005, of the Ministério da Agricultura, Pecuária e Abastecimento (MAPA), which established the Identity and Quality Standards (PIQ) for these spirits. The prestige of these spirits can be assigned to aspects well known related to the production site which can influence its characteristics. The quality of sugarcane aguardente is enhanced by the production conditions such as the scale of production, quality of facilities, production process, the alcoholic content of these spirits not in accordance with the law, regardless of site of origin of the samples are indicative of lack of technical knowledge of the production process in respect of distillation techniques and/or the product standardization procedure. Thus, the development of methods to establish the authenticity and characterization of Spirits cane sugar produced in different states is fundamental for the quality assurance of the offered product, enabling differentiated products receive higher prices and prevent inappropriate use of regional names by producers. Near-infrared spectroscopy (NIR) has been used for discrimination of various products and quantification of compounds in foods and beverages, the aim of this study was to develop a methodology using NIR spectroscopy and chemometric tools such as non-destructive method for sugarcane aguardente authenticity assignment produced in São Paulo compared to other produced in the state of Minas Gerais, as well as predict their ethanol content.
