The aim of this study was to evaluate the effect of palm oil unsaponifiable matter, compared to α-tocopherol, on oxidative stability of soybean oil under accelerated storage in oven. The oil from the palm fruits pulp (Elaeis Guineensis), mature and dehydrated, was extracted by cold pressing and evaluated as to their chemical characteristics, bioactive properties and antioxidant action. The unsaponifiable matter was obtained by saponification with 50% KOH, and washing to remove the soap formed. Natural antioxidants, commercial α-tocopherol (T), and the unsaponifiable matter of palm oil (M) were applied to soybean oil at a concentration of 200 mg/kg. Refined soybean oil (OSR) was obtained from local businesses, and purified (OSP) alumina column to remove interferents. Treatments: OSR, OSRT, OSRM, OSP, OSPT and OSPM were subjected to accelerated storage in oven (60 °C/20 days) and evaluated for their physicochemical quality and retention of bioactive compounds. The chemical and bioactive properties of palm oil were in line with the literature and the legislation, besides showing good antioxidant capacity. The purified soybean oil suffered more degradation than refined soybean oil due to the removal of the natural antioxidants during the purification process. The addition of unsaponifiable matter helped the preservation of the physicochemical quality of refined and purified soybean oils, reducing the formation of peroxides and conjugated dienes. It was able to provide carotenoids and preserved portion of phytosterols and tocopherols. It was found that the unsaponifiable matter of palm oil was able to retard the appearance of degradation products in soybean oil, partially preventing the deterioration of bioactive compounds |
