Resumo: This work aimed to help in the structuring of a strategic planning for the dairy of SISCOOPLAF and to study the use of the Hoshin Kanri as a strategy deployment tool, in the context of a cooperative which does not use the lean manufacturing management system. The methodology used was a case study with a qualitative approach. The tools used were SWOT analyses, Business Model Canvas (BMC) and Hoshin Kanri method (HK), using Fischmann (1987) and Cudney (2009) models. The result showed that the dairy needed to diversify its target audience and reduce its production losses, increasing sales and gross operating results. Therefore, the strategic planning was developed under the following goals: diversification of the target audience, seeking to reduce the dependence of the dairy from public educational institutions; increase production and annual billing by 100% to 2024 – these goals are closely linked to the first and depend on mutual execution of the three to achieve success.
