Resumo: Due to evaluate the enterpreunership owners behaviour in the field of bars and restaurants from Salvador city, to face the growing necessity of profissionalization in this activity, a study was made trough an explorating investigation from the subjects already published about the theme and than a research was made with an non probabilistic universe by judjement that could prove the trends pointed at the developed study. The bases of the questionary was inpired at the Alcorn (1982) methodology, to check the degree of enterpreunership, added of some questions that emphatizes the presence of estrategic planning in the emprises, and yet if those as family own business also would be influenced by that. We got the conclusion at the end of the study, that there are two possibles directions to the emprises studied in function just from the intersection and the combinations among the variables pointed.
