Resumo: This research aims to understand the development of the sugar-alcohol sector in Minas Gerais and its process of (re) structuring the territory of Iturama/MG, Pontal do Triângulo Mineiro, with emphasis on the work process of the sugar cane harvest. To develop this study, we tried to examine the reorganization of the agricultural area and the processes of formation and expansion of the sugar-alcohol sector from public incentives policies and economical and technological changes that affect the production process and work in the sugar cane fields. To analyze the process of expansion of the sugar-alcohol sector in Minas Gerais, specifically in Iturama/MG, we made researches to get information and data, with the representative people which interests interact with the process, but also those who relate to employees, among these institutions we have rural and workers unions, the associations of technical support to sugaralcohol units, and the like. The analysis are supported by the authors that discuss the problem of agriculture modernization and aspects that discuss the sugar-alcohol sector development. The study concludes that the sugar-alcohol sector s expansion process has been secured by new investiments encouraged by policies to increase the production of agrofuel in the last few years, making the region of the Triângulo Mineiro/Alto Paranaíba as the main area of sugaralcohol development activity of the state, which has generated the expansion of workers exploitation in the area, mainly through the s of technification/ mechanization process of this activity. On the whole, the changes have increased the great exploitation of the cane cutters that have been increasing the labor productivity for keeping their jobs.
