The following essay has as purpose the characterization of the food education inside the nutrition graduation, in the Universidade Federal de Ouro Preto (UFOP), with a view in the formation of the nutritionist as educator. At a first moment, it was proceeded the characterization of the curricular organization from the Course of Nutrition and the undertaken reforms, from the documentary analysis. Searching for the real conditions of the course realization some interviews were taken with the coordinator and professors. In the sequence, from interviews with egresses, professional trajectories and difficulties faced in the exercise in the educator role had been identified, considering the instrumentalization gave by the graduation. Finally, the challenges and relative suggestions to the curricular changes were listed from the disposable data. The Course of Nutrition in the UFOP appears in 1980, structuralized in the matrix of the traditional discipline. In the first curricular change carried through in 1986, it is registered the concerning about the Public Health education. In 2004 the second change took place. According to the DCN, it is registered, in a formal way, the reduction of the basic cycle time table in detriment of the professionalizing cycle. In the middle of the epidemiologist transition, obesity takes space in the resume, at the same time the Clinic Nutrition is valorized. Supported by the nutritional orientation, this path places in evidence the changes in the food behaviour, associated to the physical activities. By the way, the multiprofessional work petition is distinguished as the valuation of the psychological aspects, in the behaviour source. The food education considered in the level of the didactic thecniques, is presented in a generic way in the nutritionist performance, revealing the lack of formation of the nutritionist as an educator. Recognizing the weight of this gap the egresses mentioned the faced difficulties, dislocating the personal persistence in the confrontation of the problem, and also the alternative of reaching the specialization after the graduation. Parallel to the proposal of the course time table increasing it was preconized the inclusion of the Sportive Nutrition subject and the Health Promotion thematic, as well as the discution about educational authors. Considering the challenge of the attendance to the DCN recommendantions, in what it refers to the integration of contents and the relation between theory and practice, besides the search of the pupils autonomy, is relevant the question: in which measure the suggestions of changes are viable without the alteration of the model of curricular organization, in order to making possible the formation of the nutritionist as educator. |
