Resumo: The search for a development without considering the carrying capacity of natural resources has led us to revise this model and find methods of treatment and disposal of municipal solid waste that enable reuse and recycling in order to contribute to the minimization of environmental degradation , increased cycle life as well as to generate income. Among the various municipal solid wastes have residual oil frying, which has not yet set management method. And when discarded improperly, increases the risk of water pollution and soil. The objective of this research was to discuss the importance of creating a management plan for the residual oil from frying with a view to sustainable development, for it sought to what already existed in the literature on the subject, and if there was involvement the government and the private sector in sustainable actions for residual oil frying. Thus, we conducted interviews, photographs and applied questionnaires, which were dealt with qualitative and quantitative. The research comprises thirty employees of bars and restaurants Rim Watchtower Aracaju - SE The results show a total lack of public bodies in the actions that make the management of residual oil frying. Therefore, it is essential to establish a waste management plan that is linked to the Integrated Management Plan for Municipal Solid Waste in the city, as well as the need to create legislation directed specifically to residual oil frying, to meet the solid waste law, and especially the sustainability.
