Resumo: During fruit maturation process occurring chemical and physical transformations which were analyzed, make the development of the fruit something distinguishable in stages and in quantifiable values. Using these tools and considering that the fruit harvested under ideal conditions or close to it, can extend beyond your time limit for consumption, maintaining their functional qualities, essential requirement for the consumption of a food that beyond the proper nutrition provides additional benefits to those devour., can determine an optimal harvest point. Considering that the fruits are one of the foundations of good nutrition and more affordable economic and cultural point of view of what would be many vitamin complexes, we seek in this work the emphasis to a native fruit, popular but little explored. The murici, common name Byrsonima gender, is a small drupe, yellow color and characteristic aroma, used primarily in the production of by-products such as juices and sweets by the native population, but little evident on a national scale, has according to some studies a high potential antioxidant, ascorbic acid doses variables throughout its maturation and high levels of phenolic compounds, largely responsible for its antioxidant behavior. Considering the possibility of a better use and own recognition of their functional capabilities, this study aimed to analyze the chemical and physical behavior during the process of development and maturation in order to determine an appropriate collection point the two species Byrsonima genre commonly found in carvings of Roraima, B. crassifolia and B. coccolobifolia, taking into account the basic characteristics of a fruit fit for consumption and the high expressiveness of its functional components.
