Resumo: The term milk drink has broad sense and can encompass a range of products made from milk and whey, between these fermented dairy beverages with added fruit pulps. In these products the use of whey, a waste product of cheese production, contributes to improving the nutritional value and reduces environmental pollution problems. In this work, the goal was to develop fermented dairy beverages with different concentrations of whey (20%, 30% and 40%), and pineapple flavors graviola, comparing the products obtained with the trademark through sensory tests, for selection of the best formulations, one for each flavor. Then, it was verified that the selected products met the requirements physicochemical and microbiological established in legislation. The sensory tests applied were accepted by hedonic scale of nine points and intention to use, and also performed the calculation of the index of acceptability. In physicochemical analyzes, were determined pH, acidity, fat, protein, lactose, water, ash, calcium and phosphorus in the microbiological total and fecal coliforms and total count of lactic bacteria. In all tests, the samples were analyzed 24 hours after the processing, being maintained under refrigerated storage at 8 ± 2 ° C until the time of analysis. The microbiological evaluation was also repeated after 14 and 28 days of storage. The fermented dairy drink containing 30% whey flavor in pineapple flavor and 40% soursop, Featured in sensory tests, met the requirements physicochemical and microbiological established in legislation, with lactic acid bacteria remained viable in these products during the storing measured, yielding values exceeding 106 CFU / mL. The addition of up to 30% whey in fermented milk drink formulation with pineapple pulp afforded a product as well as sensorially acceptable trademark evaluated in the same flavor. In product made with soursop pulp, could add up to 40% of whey, having presented the same appearance and taste better than the commercial product with best performance among brands in sensory testing. Therefore, the addition of whey in fermented dairy beverage formulation is presented as an alternative to the better utilization of proteins and minerals, in addition to preventing problems like pollution of wastewater resulting from their disposal and can be applied by agribusiness.
