Resumo: It was carried out two experimente with 648 european quail to evaluate the effect of the reduction of protein with supplementation of industrial amino acids on the development of the carcass and organs of quail on growth stage( 22 or 42 days of age) under different temperatures. In the first experiment it was used 324 male European quails under a thermoneutrality environment (26ºC and BGT of 77,08). In the second experiment, it was used 324 quail under a heating stress environment (30ºC and BGT of 81,97). In both experiment, the fowls(birds) were distributed at random, divided into nine diets: D1 Requirement, D2 Reduction of 10% in the rude protein (PB), D3 Reduction of 20% in the Pb, D4 Reduction of 10% in the Pb, with correction of the Met + cist, D5 Reduction of 20% in the Pb, with correction of the Met + cist, D6 Reduction of 10% in the Pb, with correction of the Met + cist and Lis, D7 Reduction of 20% in the Pb, with correction of the Met + cist and Lis, D8 Reduction of 10% of the Pb, with correction of the Met + cist, Lis and Treo, D9 Reduction of 20% of the Pb, with correction of the Met + cist, Lis and Treo, with it was six repetition, being six fowls by experimental unit. In the first experiment there effect of the reduction of the rude protein and suplementação of amino acids on the profit of weight, alimentary consumption of ration and conversion, weight and income of carcass, weight of the leg and weights and incomes of the liver. However, it did not have effect on the alive weight, weights and incomes of chest, heart, gizzard. It recommends the reduction of the rude protein of the ration of 22 for 19,8 remaining the levels of digestible Metionina+cistina in 0,800% and digestible lisina in 1,020%, for European quails of the 22 to the 42 days of age, kept in environment thermoneutral. In the second experiment, It did not have effect of the reduction of the protein and suplementação of amino acids on the alive weight, profit of weight, alimentary consumption of ration, conversion and weight and income of carcass, chest and leg, heart and gizzard. However, effect on weight and income of liver was verified. In hot environments the rude protein of the ration for European quails could be reduced of 22 for 17,6% with the had suplementação of metionina to reach the level of 0,800% of Met + cist digestible, during the growth phase (22 to 42 days). With regard to the effect of the temperature , temperature of 26ºC with BGT of 77,08 attended the limit f thermal comfort while the temperature of 30ºC with BGT of 81,97 affected the development, presentingthis way, a decrease in the final weight , weigh gain, low yield of carcass, cuts and low weight of organs. The development and characteristics of carcass for slaughter are affected under environment close to 30ºC and BGT about 80. IT was noticed that adjustments in the feed consumption, in metabolic rate and physiological responses of animals were sufficient to keep the homeothermy.
