Resumo: This research in Environmental Education aims to map and discuss the knowledge and environmental practices of Ilha das Caieiras, a neighborhood from the city of Vitoria (ES), and how it relate with schools and mangroves of Vitoria Bay, betting on an Autopoietic Environmental Education. This thesis bet on cognitive and narrative policy, in the exercise of monitoring the movements of environmental knowledge and practices that emerge from networks of talking and from relations of coexistence and convenience among subjects and storytellers: fishermen, “crab desfiadeiras” (women from traditional culture of Ilha das Caieiras who prepare and unravel the crab before cooking), crab pickers, merchants, students and teachers. The practices of Ilha das Caieiras are consequences of living, fishing and cooking enhanced by Gastronomic Tourism and Easter. Autopoietic Environmental Education as ethical, political, aesthetic and ontological dimension shifts the "sustainability" practiced for the green market and in official speeches to a domain of action in living and convenience in everyday life. This research covers crossings inspired by Humberto Maturana and Michel de Certeau. Methodological contributions are: narrative research in Environmental Education, cartographic research and research with the everyday. We captured the following social-environmental knowledge: rhythms of the street Felicidade Correia dos Santos, uses of mangroves, museum, uses the pier, restaurants, local language, children in Gastronomic Tourism and working during the Easter, tools and territories of fishing, fishermen work, movements tides, canoes construction, vessel types, fish species, crustaceans, crab reproduction seasons, types of play, legends, songs, songs of the mainstream media, recipes, spices used in pies, fish stew, traditional dishes and different ways of prepare crabs and shrimps for cooking. The choice of theoretical intercessors and the production of data with the subjects and storytellers indicate autopoietic environmental educations produced with the networks of talking with the practices of neighborhood take place between conflicts and negotiations in the relations of coexistence and convenience that was constructed between processes and relations with the everyday lives lived in mangroves and collectives alive and not alive of mangrove from Vitoria Bay
