Resumo: | The purpose of this dissertation was to try to understand which elements of the sociocultural dynamics of the restaurants, buffets, rotisseries and exclusive patisseries (pastry patisseries) from Maringá anchor the local commensality, considering the process of identity as a construction as closely linked the self-image, in the image given in/or by the alterity in the complexity of sociocultural tract, among other factors linked to it also. In order to accomplish this task, were qualitatively analyzed the data from twenty-two structured interviews with owners and/or chefs in these establishments between the years 2012 and 2013, including questions about their economic and sociocultural profiles, their origins and motivations to migrate or emigrate to the city, plus relevant aspects of family meals in the daily and/or in their establishment that give them material support and symbolic. The text is organized in three chapters, being the first of them a lyrical and playful prelude which took piecework justification for poetic license taken by the author when he established the title of his work for, soon after, introduce the reader to the discoursed content in other chapters and their subsections. In the second chapter, the text presents the dialogue between the theoretical framework, the research problem, its relevance, problematic, hypotheses that could have been built to give better support to the proposed analysis of field data, in addition to the general and specific objectives of the research. The third chapter comprehends descriptive and interpretive analyzes of inferred categories and subcategories from the field and the corpus, associating them to the content and discourse analysis methodologies. The final considerations seek to synthesize the most relevant aspects of the analyzes presented. |
