Radiação UV-C altera a coloração e o potencial antioxidante do tegumento de feijão carioca

Resumo: Beans are a type of legume consumed in Brazil and around the world, and carioca beans are part of the Brazilian diet. However, during processing, changes in tegument colors occur, influencing the commercial reception of the grain. The chamber with UV-C light allows the simulation of accelerated aging and the observation of changes in the color of the integument. The present study aimed to characterize 25 genotypes of carioca bean recognized by simulated aging by UV-C light in terms of tegument color and antioxidant potential. Twenty-two lines and three parents were used and cultivated in the experimental area of UTFPR – Pato Branco. Genotypes were initially evaluated for yield components, and after being tolerated under UV-C light for 72 hours, they were then evaluated for color variables (in terms of L* - luminosity), antioxidant potential by ABTS, DPPH, and FRAP methods, and estimation of the total content of phenolic compounds (CFT) and flavonoids (FT). The results obtained were examined using an analysis of variance, a t-test (comparison between before and after UV-C), and the Scott and Knott mean test. For the yield components, the lines that presented the highest values were lines 252, 116, 145, 178, and 320, presenting a thousand-grain mass superior to their parents (in the same cultivation condition) or values similar to some cultivars available in the market (L252, L116, L145). The application of UV-C light resulted in a significant difference in tegument colors in most genotypes, being above the suggested value for carioca bean (L* 55) in only five lines (L116, L128, 145, L162, L202, and L178). The CFT and FT contents also showed a significant difference before and after the application of UV-C light, with a general decrease in phenolic compounds and an increase in total flavonoids. For CFT, strains 173 and 310 showed the highest values after UV-C application. For FT, strain 320 showed the highest value after UV-C application, followed by 173 (group b of means) and 310 (group c of means). For the analysis of antioxidant activity, in all three methods, there was a significant difference in the evaluation before and after UV-C, with the behavior being genotype-dependent. Lines 277 and 278 adopted the highest ABTS values after UV-C, followed by line 310 and the cultivar IPR Tangará. For the DPPH method, strains 178, 277, 278, and 320 were the ones that showed the highest values after UV-C, and for FRAP, strain 173 showed the highest value. Based on the results, it is possible to conclude that lines 173, 178, 310, and 320 presented the best result in the largest of the variable variables, being promising for their future release as a cultivar since they presented tegument with L* varying between 50.418 and 55.355 even after UV-C application, a mass of a thousand grain varying between 164.89 and 234.08 g, higher potential antioxidants by ABTS, DPPH, and FRAP methods, and higher CFT and FT values after UV-C application.

Porém, durante o armazenamento, ocorrem alterações da coloração do tegumento, influenciando na aceitação comercial do grão. A câmara com luz UV-C permite simular o envelhecimento acelerado e observar as alterações na coloração do tegumento. O presente estudo teve como objetivo, caracterizar 25 genótipos de feijão carioca submetidos ao envelhecimento simulado por luz UV-C quanto a coloração do tegumento e potencial antioxidante. Foram utilizadas 22 linhagens e três parentais, cultivados na área experimental da UTFPR – Pato Branco. Os genótipos foram inicialmente avaliados quanto aos componentes de rendimento e após submetidos a luz UV-C durante 72 horas e então avaliadas as variáveis de cor (quanto a L* - luminosidade), potencial antioxidante pelos métodos ABTS, DPPH e FRAP e estimativa do teor total de compostos fenólicos (CFT) e flavonoides (FT). Os resultados obtidos foram submetidos a análise de variância, teste t (comparação entre antes e depois do UV-C) e ao teste de médias Scott e Knott. Para os componentes de rendimento, as linhagens que apresentaram os maiores valores foram as linhagens 252, 116, 145, 178 e 320 apresentando massa de mil grãos superiores aos seus parentais (na mesma condição de cultivo) ou valores semelhantes a algumas cultivares disponíveis em mercado (L252, L116, L145). A aplicação da luz UV-C resultou em diferença significativa na coloração do tegumento na maioria dos genótipos, ficando acima do valor sugerido para feijão carioca (L* 55) apenas cinco linhagens (L116, L128, 145, L162, L202 e L178). Os teores de CFT e FT também apresentaram diferença significativa antes e depois da aplicação da luz UV-C, ocorrendo de modo geral a diminuição dos compostos fenólicos e o aumento dos flavonoides totais. Para o CFT, as linhagens 173 e 310 apresentaram os maiores valores após a aplicação do UV-C. Para o FT, a linhagem 320 apresentou o maior valor após a aplicação do UV-C, seguida da 173 (grupo b de médias) e 310 (grupo c de médias). Para a análise da atividade antioxidante, nos três métodos houve diferença significativa na avaliação antes e depois do UV-C, sendo o comportamento genótipo dependente. As linhagens 277 e 278 apresentaram os maiores valores de ABTS após o UV-C, seguidas pela linhagem 310 e cultivar IPR Tangará. Para o método DPPH, as linhagens 178, 277, 278 e 320 foram as que apresentaram os maiores valores após o UV-C e para FRAP, a linhagem 173 apresentou o maior valor.
