Microbiological evaluation of yerba-maté (Ilex paraguariensis St. Hil.)

Summary: Food sanitary-hygienic control is fundamental for any food company having success. The present work aimed at analyzing yerba -mate (Ilex paraguariensis St. Hil.) for assessing the occurrence of microbiological contamination. The analyzed samples were of two types green leaf and toasted leaf. The analyses were performed according to the World Health Organization and the Brazilian Resolution (ANVISA/MS, RDC Nº. 12/2001) guidelines: the yeast and molds counting (UFC/g), the mesophylic aerobic bacteria counting (UFC/g), the most probable number of total and fecal coliforms/E. coli (NMP/g), besides Salmonella spp/25g survey. Also, water activity was analyzed on yerba-maté samples. The results obtained from these analyses were in conformity to the effective legislation, showing the use of good product manufacturing practices, and the quality of maté available to consumers.

O objetivo deste trabalho foi avaliar a contaminação microbiológica de amostras de erva-mate (Ilex paraguariensis St. Hil.). As amostras foram do tipo cancheada folha verde e folha tostada. As análises foram realizadas de acordo com a Organização Mundial da Saúde e a Resolução ANVISA/MS (RDC Nº. 12/2001): contagem de bolores e leveduras (UFC/g), contagem de bactérias mesófilas (UFC/g), contagem de coliformes a 35º C (NMP/g), determinação do Número Mais Provável de coliformes a 45º C (Escherichia coli) (NMP/g) e pesquisa de Salmonella spp/25g. Como complemento foi determinada a atividade de água nas amostras. Os resultados de atividade de água revelaram valores entre 0,639 e 0,713g/100g.
