Resumo: The objective of this study was the structuring of a theoretical model on the traceability process in Brazilian chicken production aiming to exporting to the European market. In this way, this work was divided into two trials: the first on food traceability in international trade; And second, a radar model to analyze traceability in the export of Brazilian chicken to the European Union. The first essay aimed how to analyze the uses of concepts and studies on traceability and food traceability in the context of international trade, portraying how the scope of food traceability has been routed in the international scenario. With this aim, this work intends to advance in the discussion about the criteria of the process of origin used by the countries through a theoretical essay. The assimilation of food traceability in the production process, aiming for access to markets, establishes a challenge for the implementation of public policies that establish a standard of the required requirements. An efficient record-keeping system characterizes a vital aspect of traceability, any strand intended to define traceability without record-keeping will be mistaken for inconsistent components. In the second essay, the focus is on the construction of a theoretical model that allows to highlight the main traceability requirements requested for the export of Brazilian chicken meat to the European Union. Although Brazil suffers the effects of the economic crisis, the poultry industry broke several records in the production and export of chickens. Although they have obtained excellent results, Brazilian exports are subject to non-tariff restrictions, in particular, in the European Union. This fact, hinders access to important markets for Brazil. The model was adapted from the radar of innovation, complemented with documentary research. Two contributions are presented, the first one arises from the coordination of the main actions to be taken by the exporter while integrating the process and monitors the direction of actions constituting a superior competitive strategy. The second comes from the proposition of a roadmap for the traceability system focusing on food traceability. The results of the tests showed that the control in the traceability process, provides a strategic management able to provide guidelines on the structure in the productive process appropriate to the company, that intends to commercialize with the European bloc.
