Resumo: This study describes the effects of food restriction and refeeding on growth and energetic metabolism of juvenile pacu (Piaractus mesopotamicus) through biochemical, histoenzymological and structural focuses. Experimental was carried out in UNESP Aquaculture Center, Jaboticabal, São Paulo State from October 17, 1995 to January 16, 1996. 98 juvenile fish (mean size of 250 g body weight) were separated in two groups: fed (control) and food restricted (experimental). The experimental group was sampled at zero (0), 2, 7, 30 and 60 days of starvation and 7 and 30 days of refeeding (n = 7/day/group). The control group, daily fed, was sampled at the same days. All data were analyzed using a 2x7 factorial scheme (two nutritional conditions - food restriction/refeeding and conditions feeding - and seven different periods of restriction and refeeding) in a Completely Randomized Design with seven replications. Means were compared by Tukey's test. Restricted food fish exhibited decreased body weight and length and compensatory growth after refeeding. Food restriction induced reduction in the hepatosomatic index (HSI) and visceral lipid somatic index (VLSI), recovering after refeeding. Carcass dry matter and ethereal extract decreased concomitant to increased moisture under food restriction, although none difference was detected in crude protein and ash contents. Blood glucose showed lower levels along the experiment and experimental group showed peak values during food restriction. Liver glycogen decreased after 7 days without food. Plasma total protein, liver total lipid and T3 (triiodotyronine) showed lower levels in food restriction regime. Free fatty acids increased through the food restriction and decreased in the refeeding.
