The sweet sorghum is a C4 plant. It has a high photosynthetic capacity as well is rich in fermentable sugar content, being able to complement the ethanol production in the sugarcane season using the same agroindustry structure. This work aim was evaluate the ethanolic fermentation performance of musts prepared from the RB855453 sugarcane variety at 1st, 2nd, and 4th cut or the CVSW80007 sweet sorghum cultivar harvested early autumn, April 17th 2014 in Jaboticabal, SP. It was used the completely randomized experimental design with 10 treatments and 3 replications of the fermentative process. The evaluated characteristics were the extracted juice, must (Brix, pH, reducer sugars, total reducer sugars, total acidity, starch, and phenolic compounds), and wine (total acidity, glycerol, total residual reducer sugars, and ethanol content). It was quantified yet the microbiological parameters (cellular viability, budding index and viability) of Pedra-2 (PE-2) yeast strain at the beginning and end of the fermentation. The 1st cut raw material quality, when compared to the sweet sorghum is superior, considering the TSA kg/ton of stalk and Total Acidity. The must of the sugarcane-sorghum mixture presented a reduction of 29% in the phenolic compounds when compared to the juice. The sweet sorghum fermentation resulted in a higher quality of alive cells and buds in early fermentation when compared to the sugarcane plants.
