Resumo: This project had as objective the extraction of unsaturated fatty acids from sunflower oil and from these acids were formed adducts with meglumine, these adducts were characterized for the study of acid-base reaction formation of these carboxylate-meglumine compounds. It was initially performed the extraction and purification of fatty acids present in sunflower oil, followed by characterization by means of Vibrational Spectroscopy techniques in the infrared (IR) and Nuclear Magnetic Resonance (NMR) as well as to study the thermal behavior of this substance from thermoanalytical techniques Differential Scanning Calorimetry (DSC) and thermogravimetry (TG). After the characterization of the extracted acid gave the formation of adducts with meglumine also followed characterizations using the same techniques used for characterization of the acids. Structural characterization of adducts confirmed that the proton transfer through acid-base reaction is key to the process of forming the same. The thermal characterization showed the decomposition process of the samples under study. Finally, analysis of adducts - water systems using polarized light microscopy showed different microstructural arrangements depending on the system composition and showed hexagonal liquid -crystalline and lamellar mesophases in the studied systems.
