Resumo: Eryngium foetidum L. (Apiaceae) is a vegetable used as spice and medicinal plant in tropical regions. The present study was aimed to evaluate the production of biomass and antioxidant compounds in leaves of E. foetidum in relation to maturity of leaves, pruning of inflorescence, luminosity and nitrogen fertilization. Two field studies were carried out. In the first experiment we evaluated yield, the concentration of primary metabolites, bioactive compounds and the activity of oxidative enzymes in leaves in relation to the pruning of floral stalks in different growth phases. Significantly differences were observed in leaf biomass and in the levels of antioxidant compounds. The highest contents of flavonoid, phenolic compounds, chlorophylls and carotenoids were observed during the initial phases of growth, between 60 and 90 days after germination. Anthocyanins were concentrated with the maturity of leaves, after 200 days. A reduction in the concentrations of bioactive compounds and antioxidant activity was observed with increase in the activity of peroxidase and polyphenoloxidase. In the second experiment, the production of biomass, essential oil, phenolic compounds and mineral nutrients were evaluated in the leaves in relation to 50% shading and different levels of nitrogen fertilization (0, 40, 80, 120, 160 kg ha-1). Significantly differences were observed in plant growth and in the concentrations of essential oil, pigments, phenolic compounds, mineral nutrients and antioxidant activity measured by DPPH radical. The highest biomass production was achieved in non-shaded environment. The total biomass and leaf biomass showed significantly linear increase as a function of the nitrogen fertilization levels. Overall, shading had significantly negative effect in the production of essential oil, total polyphenols, flavonoids, chlorogenic acid, ferulic acid and p-coumaric acid.
