In last years, a growing in the bird market migth be observed into a cenary characterized by the growth of new industries' entrance and exporation. Answering to this, the chiken's fell's factories are trying to make it's process stronger, looking for aswer the market's needs. In contribuition to the process' development, new methods are being created, where the Six Sigma mitgh be pointed. This method show the utilization os Sig Sixma's program in the chiken fell's factories loking for improve the pratics to the definition and conduction of a project centered in the improvement of process. Then, the Six Sigma looked identifying the essential process, with the intention of verifying the central competences studied to the development of projetcs into Six Sigma program, and defined methodologies and criterys to the identification of problems and selection of projects throw the application of maps of reasoning and applicate the Six Sigma program with the utillization of DMAIC in a previosly selected project, looking for demonstrate the development of the program. The application of project is shown in six levels, by a map of reasoning to each level or step, which show the details of the statistics techniques used until the level of action plan. Beyond it, a map of reasoning to the steps of verification and standartment of process, not gifted in this study in function of the time. The final results brings the benefits of the utillization of the program and the importance of the maintence of the databases and the involvement of people to its success.
