Resumo: | The theme of food systems has been widely debated, especially in a global scenario marked by climate change, food insecurity, and economic challenges. Agro-food systems, whether global or local, reflect complex interactions between production, distribution, and consumption, influenced by cultural, economic, and environmental variables. With the increase in food insecurity and the emergence of movements promoting sustainable diets, it is essential to study the factors guiding food purchasing locations and their impacts on health and the environment. In this context, the sociology of food provides a robust theoretical approach to exploring how cultural and socioeconomic aspects shape food preferences, influencing everything from acquisition to consumption. Thus, the overall objective of this thesis is to investigate the consumption relationships established at open markets and supermarkets in the Central Region of Rio Grande do Sul. Data collection took place from September 2023 to March 2024 in the cities of Santa Maria, Santiago, and Cachoeira do Sul. Part of the data collection was conducted in person, yielding 298 completed questionnaires, while the other part was conducted online, yielding 295 responses. After excluding questionnaires that did not meet the regional criteria, a sample of 593 valid questionnaires was obtained. The data were analyzed using IBM SPSS software. The main findings were organized into five articles. The first article is a bibliometric review that aims to explore and synthesize literature on consumption habits with a focus on different food markets. To further develop the topics addressed in the first article, the second article aims to analyze the themes surrounding food markets and consumer eating habits through a systematic review of publications from the past five years. The third article aims to investigate the factors associated with food purchases at open markets and supermarkets in the Central Region of Rio Grande do Sul. Subsequently, the fourth article investigates and analyzes the eating habits of consumers who frequent open markets and supermarkets. The fifth article investigates food practices based on the location of food purchases in the Central Region of Rio Grande do Sul. Thus, the thesis findings deepen studies on food markets in the Central Region, investigating the relationships between acquisition, consumption, and practices surrounding food. Analyzed through the lens of New Economic Sociology and the Sociology of Food, the results emphasize the complexity surrounding food consumption habits. These findings indicate that beyond economic aspects, social, cultural, environmental, and logistical factors influence the markets accessed and the consumption habits developed. The main contributions of the thesis include an in-depth understanding of food consumption dynamics in the Central Region and the identification of more sustainable food practices associated with open markets. |
