Características físico-químicas e indicadores de qualidade higiênico-sanitária em buchada caprina

Resumo: | Buchada goat is prepared with products of slaughter, viscera and blood, which is presented as an option to increase the supply of meat products derived from goats. Due to the vast manipulation during its preparation, this product may pose a risk to consumers health if not prepared properly. This study aimed to evaluate the microbiological and physico-chemical quality of buchada goat samples sold in João Pessoa city, Paraíba, Brazil, in different storage conditions. A total of 50 samples were collected (from March to September 2012) in street fairs and butcher shops, being put under refrigeration, freezing or room temperature. The physico-chemical quality of buchada goats showed an excellent nutritional value (each 100g of goats buchada presented, on average, 73g of moisture, ash 2g, 17g protein, 5g of fat and 2g of carbs), enhancing their profile fatty acids, especially unsaturated fatty acids oleic, linoleic and linolenic acids. The samples also showed high cholesterol content, with a mean concentration of 266 mg/100 g. In the amino acid profiles analysis was identified 18 different amino acids, especially the essential amino acids lysine, leucine, phenylalanine and valine. The results of the samples microbiological analyzes revealed no Salmonella spp. and L. monocytogenes. However it was found high counts of coliform and total coliform, ranging from 1.5 to 1.1 x103 x105 NMP / g. Still, for sulphite reducing Clostridium counts ranged from 6.3 x 10² to 5.8 x 106 CFU / g, it was detected the presence of coagulase-positive Staplylococcus in three samples with scores between 8.1 x104 and 2.5 x106 CFU / g. These results show the buchada goats detachable nutritional value, with high protein, low fat, in addition to satisfactory profile of fatty acids and amino acids. However it warns the high levels of contamination, including fecal origin that may pose a risk to consumers and indicates the necessity of intervention by public supervision agencies to adopt ways to promote security in the production and sale of this product. |
