Resumo: | Milk is considered almost a complete food and is consumed universally by individuals of all age. With the global recognition of the importance of controlling microbiological and chemicals hazards in food, the "quality" became a mandatory requirement in the scenario of world-wide dairy agribusiness, in order to the safety and satisfaction of the consumer. Of all these chemical hazards, the antimicrobials are those that have major health and animal implications and industrial processing, because of its wide use (and even misuse) in livestock, whether for therapeutic and prophylactic purposes or as an animal growth promoter. In Brazil, as in other countries, antimicrobial agents are chemical residues that are very frequently detected in milk. Considering the relevance of possible impacts on health and in the national dairy industry, and taking into account the need to evaluate effective methods of screening which can be validated and adopted officially in the country, it was intended with this work to contribute for the Monitoring of Residues of Veterinary Drugs in Milk in Brazil. The specificity, sensitivity and applicability of the screeningtest of inhibition Bacillus stearothermophilus var. calidolactis ATCC 10149, proved for its validation, showed that it displays suitable performance for use in detection of beta-lactam antibiotics residues in bovines milk, but not of the other antimicrobials studied. Indications had been observed that synergistics interactions of penicillin with other beta-lactamics and aminoglycosides, as well as these with penicillin, can lead to the sensitivitys increase of the method. The results showed that in the bioassay evaluated, only the use of the plates of post-screening multiple system would not allow to infer about the class of antimicrobials to which the residue found belong. |
