In Brazil, inspection of products of animal origin takes place at the municipal, state and federal levels. Each of these bodies has specific duties. This study carried out a survey of the nonconformities found in dairy products in Minas Gerais, Brazil, between 2011 and 2017, by the official state inspection body. The most common non-conformities found suggest fraud by adding water and/or other ingredients aiming at a higher profit in the final product. The percentage of non-conformities in the dairy drink was 6.1%; that of dulce de leche, 27.6%; that of pasteurized milk, 41.7%; that of fermented milk, 44.2%; butter, 40.3%; “minas frescal” cheese, 72.5%; mozzarella cheese, 10.5%; curd, 22.6%; and fresh ricotta with 31.1% nonconformities. This survey demonstrated the importance of official inspection, given the large number of non-conformities found.
