Vídeo animado como proposta de intervenção educativa com manipuladores de alimentos no contexto escolar

Resumo: To analyze the effect of an educational intervention through an aesthetic and synthetic language on good practices of food manipulation and attribution of meanings to the role of food handlers of public educational institutions of Belo Horizonte, MG. Methods: This was a randomized controlled trial conducted with two groups of food handlers (intervention group - GI and control group - GC) of public educational units of Belo Horizonte - MG. Data collection was done through an individual interview, following a previously structured script. The transcribed material was submitted to the analysis of thematic-categorial content, proposed by Bardin and the technical questions were confronted with the sanitary legislation in force. After calculating the categories and their frequencies, for each question in the script, the data were analyzed in descriptive quantitative, with the purpose of comparing IG and CG. Results: 369 food handlers, 180 GI and 189 from the CG participated in this study. All female participants, mostly adults, who work in the preparation of school meals, with 1 to 5 years of experience in this area and with participation of 1 to 2 times in training, in the current job. It was verified that the responses of the IG and CG participants presented common characteristics, being allocated in the same groups and categories. The BPM application was described with the hygiene axes (Hygiene, Personal hygiene / behavioral, Food hygiene, Hygiene of equipment, utensils and Environmental hygiene). The BPM application described the crucial control and control procedures for the food safety, such as cleaning and sanitation of raw foods, and cold thawing and cooking of the meat As for their role as educator, the justifications listed were guidelines and disciplinary interventions at the time of feeding and space for dialogue with schoolchildren. Regarding the importance of their work, justifications were found that refer to the positive feelings and the responsibility for their profession, the opportunity to guarantee family and learning support, and the role of the educator they play. groups of this study, regarding the effect of the educational intervention on the application of BPM and the recognition of their role as educator (p <0.05). Concerning the elaboration of the BPM concept, the justifications of being educators and the importance of their work, there was no significant difference between groups (p> 0.05). Conclusion: The proposal of educational intervention, using an animated video, had an effect on the description of the application of GMP and the recognition of the role of non-teaching educator of food handlers in the municipal school context of Belo Horizonte - MG.
