Obtenção de hidrolisados protéicos de arroz com baixo teor de fenilalanina: emprego de pancreatina e corolase PP

Resumo: With the aim of producing dietetic supplements for the treatment of phenylketonuria, rice was used as the raw matter. Initially, the proteins were extracted by an alkaline process, varying the pH and the time of extraction. The highest extraction yield (84,7%) was obtained when using pH 12 and stirring for 1 h. Twelve hydrolysates were then prepared from the protein extract, using pancreatin and corolase PP, varying the initial protein concentration and the enzyme:substrate ratio. After passing the hydrolysates through a column containing activated carbon for removing phenylalanine, second derivative spectrophotometry was used to determine the amount of this amino acid. The use of both enzymes and of activated carbon was efficient, giving rise to removal levels up to 100%. In the characterization of peptide profiles, according to their size, the rice protein hydrolysates presented high oligopeptides contents, corresponding to a maximum of 63% and 66% for pancreatin and corolase PP hydrolysates, respectively.
