Resumo: | Agro-industries are of paramount importance to the Brazilian economy and correspond to 27% of Gross Domestic Product - GDP related to agribusiness. Among the main agro-industries, we have the dairy chain, one of the largest and most important for Brazil and for Minas Gerais state, it represents 62% of the country's dairy products, in addition to its representativeness to food supply and job creation and income. With the changes in the production processes and the need for adaptation and improvements, the increase in productivity and the demand, more and more specific, as for sustainable products, thus the search for studies that can contribute so that these processes can produce more, decrease costs and work on environmental impacts. The objective in this work was to analyze the possibilities of using the Produção Mais Limpa model, as a tool, to improve the environmental impacts generated in the agroindustry of the dairy sector. On-site visits were made to collect information and data. Two agro-industries in the dairy sector were studied. After obtaining the information and data on the production processes, the production processes of all dairy products studied in both dairies were presented. Thus, in order to identify the main residues generated in the production lines, an environmental diagnosis was carried out in which it was verified whether or not there were of an environmental nature activities being carried out. After analyzing all the production processes, the main inputs used in the products were identified, detailing their processes, as well as the main residues generated in these processes. With these analyzes, the Produção Mais Limpa (P + L) opportunities to be proposed were understood. To assist in the P + L implementation and in the production processes improvement, Standard Operating Procedures (SOP’s) were developed. With the study, it was possible to understand the dairies operation, their production processes, the waste generated, and proposals for process improvements and opportunities for the implementation of the Produção Mais Limpa method. |
