Resumo: Although the occupational disease profile is one of the main epidemiological characteristics of the Brucella genus the ingestion of contaminated food is an important mean of human infection, with the cheese being considered the main source of human brucelosis. So, the aim of the present study was to research the occurrence of Brucella spp. and estimate the hygienic-sanitary conditions of Minas Frescal cheeses marketed in free markets in Goiânia. This work was performed from july to november 2019 in Goiânia - GO. Twenty nine street fairs was visited on North, South, East, West, Southwest, Northwest and Central areas of Goiânia and fifty cheeses of Minas Fresh type were acquired. The selected samples had maximum four days of processed. The cheese samples were analysed for pH, titratable acidity, moisture and alkaline phosphatase activity. To the microbiological tests, realized the counting to total and thermotolerant coliforms as well as moulds and yeasts. All samples were analyzed about presence of Brucella spp. by PCR. The values of pH, titratable acidity and moisture were evaluated by ANOVA, followed by Scott-Knott (p<0,05) test to compair the means between the seven regions. The datas referents from questionnaires, visual inspection. alkaline phosphatase activity and microbial counting were descriptively analyzed. The Central, Northwest and West's cheeses presented lower pH (p<0,05) compared to the other places. Have been detected in the Central and West's cheeses the most levels of titratable acidity (p<0,05). The moisture was higher (p<0,05) in cheeses of street fairs from Goiania North and East regions Just three samples presented negative to the alkaline phosphatase test, suggesting that three producers making cheese from pasteurized milk. The total coliforms counting (35ºC ± 1ºC) were higher in the North and Northwest areas and the minimum value has been seen in Central region. The thermotolerant coliforms counting were higher in North and Northwest too, being almost the totality of population of coliforms to 35ºC ± 1ºC. Moulds and yeasts contamination levels were greater in West and Northwest areas than the other regions. The fifity samples of Minas Fresh cheese were negative for presence of Brucella spp. DNA. Cheeses of the Minas Frescal type sold in open markets in Goiânia have adequate standards of pH, acidity and humidity, they are made with raw milk and despite the non detection of Brucella spp., they have precarious microbiological conditions, which make them unhealthy for consumption human.
