Resumo: | Believing in the Public University as an entrepreneur university, the authors suggest the creation of a competitive food service inside one of the UFF campus; the hypothesis built was that , with the used of appropriate management tools, the competitive food service, was attended by the University staff, making use of frienge benefits, for the maximum benefit price, creating financial resources to subsidy the university food service installed yet. On the. On the perspective to know potencial demand of the university food service, a virtual survey was done with a sample of 51,8% of the employers wich have institucional e-mail, improved through the government given tickets, who works on the Gragoatá university campus or on the Praia Vermelha campus, they are close to the place proposed to built the university food service. Toward the customers of two among the most mentioned restaurant by the civil servent, it was held the presencialdata survey, to know the fuding fector s counterparts. This study condudes that will be demand of civil servent to the restaurant. |
