The work prop.oses a organisation of the Productivity and Quality Indicators which target the meal distribution arca of the University Restaurant of Universidade Federal Fluminense, based on a strategic tool called Balanced Scoredcard. For this, it was tried to establish the degree of Satisfaction and Importance of the aspects related with this service through the application of questionnaires for the clientele. To identify the necessities, satisfaction and limitations of the staff and management staff involved in the researched arca of the university restaurant, the questionnaires were also applied. The aim is to elaborate a tool to facilitate managers in decision making in relation to the establishment of targets focused on the continuous improvement in customer services and efficiency increase in the service offered.
