Resumo: This study aimed to evaluate the effect of laying hens age and storage time on egg quality. The experiment was conducted from June to August 2020, in the Poultry Sector in the experimental area of Rive and in the Animal Bromatology laboratory of the Center for Agricultural Sciences and Engineering of the Federal University of Espírito Santo – Alegre ES, where storage was carried out respectively. eggs and quality analyses. 400 eggs from commercial laying hens, of the Bovans white lineage, of four different ages (20, 50, 60 and 70 weeks old), from commercial farms in the region of Santa Maria de Jetibá ES, were used. The experimental period lasted 28 days, where the eggs were stored at room temperature. The parameters were evaluated on days 0, 7, 14, 21 and 28 days, where weight, specific gravity, Haugh unit, yolk index, albumen index, relative weight (yolk, albumen and shell), yolk pH and eggshell were determined. albumen and yolk and albumen dry matter. The data obtained were subjected to analysis of variance, with subsequent mean test (StudentNewman-Keuls -SNK), at a significance level of 5% probability (P<0.05). At seven days of storage the eggs begin to show a loss in quality and laying hens at 20 weeks of age present values of Haugh Unit, yolk and albumen index higher than the other ages studied.
