The work has like hypothesis: the contract of purchase and sale of the production of organica coffee established between the small producers in the State of the Ceará, and possible importers it implicates elevated costs of transaction owing to the intrinsic instability in the institutional environment for efetivation of commercial contracts. For effective analysis the productive state of affairs of organic coffee in the State of the Ceará and the edge of profit of income with the export of the organic coffee of the small producers in different sceneries of export to the international scenery. The results demonstrate that the principal problems faced by the small producers of organic coffee of the State of the Healthy Ceará: the absence of technical back-up; and lack of co-ordination of the productive chain of the product able to supply a certification of the product, credit and labour to activity. The intervention of the State, in last decades, dislocated the productive system and not updating of the process of certification and quality control of the product increased considerably the cost of transaction of this activity, as well as also the cost of production damaging to marketing of the product in national and international level. The producers have no acess to the infrastructure and to the technical support adapted for the productin of the product with the quallity demand by the national standards to compete in national level and, consequently, in international level. Besides, they lack for a techbnical and legal advisory body to the production and to the commercial activities, which allow the insertion of market that has high power of generation of job and income.
