Resumo: | This essay consists of two studies related to the characteristics of dairy properties (management, sanity and nutrition) using the milk quality analyses as one of the indicators for it. Both studies were done in eighteen dairy properties located in the Central North and Northwest regions of Parana State. In both studies, the same kind of information originated from the field surveys (participating observation, free interview with an application of a semi-structured questionnaire, walk and the property map elaboration), and the analyses of chemical composition and milk quality indicators (fat, protein, lactose, total solids, count of somatic cells and ureic nitrogen of the milk) were used. The milk analyses were originated by the milk samples collect from lactating cows of each property, right after the milking and once a month, during the period from October to December in 2008 and from August to October in 2009. The milk samples were sent and analyzed in the Parana Association of Dutch Breed Graziers Lab. PADBG, in Curitiba-Parana. In the first study the objective was to characterize, within the perspective of the Normative Instruction No. 51/2002 from the Agriculture, Cattle Raising and Supply Ministry. ACRSM, in which the milk quality, used as a characterization toll is referred. The data were undergone to correlation analysis and descriptive statistics, and after, to the data analysis and the results description. Through the first study, it was possible to check that the dairy activity in the properties is in an intermediate phase of the modernization process. It happens because the means of milk production, in the analyzed properties, are mixed between traditional and modern. However, it.s possible to notice, through the study, that most of the dairy producers walk head to the modernization and specialization of the production, mainly in relation to the milk quality patterns. In the second study, the objective was to propose theoretical bases to help the decisions and actions of the technical assistance and rural extension (TARE) in the dairy activity, by using statistical (model) tools that takes into account the characteristics of dairy properties and the milk quality analyzes, in the building of its results. The data were undergone to a multiple correspondence analysis, in order to identify possible relations among information collected from the same property, and among the different production systems. This statistical tool was shown as effective to evaluate the studied properties and it will be used as a basis to guide the TARE to each one of the distinct groups of producers in relation to the practices that culminate in the milk quality indicators. Four distinctive groups of producers in relation to the animals. management and property structure were identified. Graphically there is an indicator of five groups, but this number was not considered, as the sample size didn.t allow this extrapolation with safety, it is necessary to enhance the number (N) of properties in future studies. This group classification allows the technical assistance guidance according to the production system nature and this, to the sampled area can be implemented immediately. |
