Resumo: The objective was to evaluate the intake, perforrnance, apparent digestibiiity of the dry matter and nutrients, blood parameters, economic viability, quantitative characteristics of carcass and qualitative of Longissimus dorsi muscle, for Saanen kid goats, fed with leveis of protected fat. Twenty-eight kid goats, males, with average age of 112.86 ± 4.81 days and initial body weight 19.54 ± 2.76 kg, were distributed in a completeiy randomized design in four treatments: control (without protected fat) with 2.5 Mcal ME/kg DM and the others with 2.6, 2.7 and 2.8 Mcal ME/kg DM, which was done using protected fat to increase metabolizable energy leveis. Animais received the diet until they achieved siaughter weight of ±28 kg. For estimate the digestibility was used indigestibie neutral detergent fiber (iNDF). No effects were observed of treatments on dry rnatter and nutrients intake. However, for non-fiber carbohydrate intake, was observed a negative linear effect for diets with inclusion ofprotected fat. Positive linear effects were observed on the average daiiy gain and reduced days in feediot. The digestibiiity of crude protein showed a positive linear effect and the digestibiiity of the total carbohydrates had a negative linear effect with inciusion of protected fat. The lipid supplernentation affects serum leveis of triglycerides and cholesterol. At the economic evaluation, the inciusion ofprotected fat was better for diet with 2.6 Mcal ME/kg DM. Carcass quantitative characteristics were not influenced by diet, but there was a reduction in siaughter age and days of feedlot of animais fed diets with inclusion protected fat. The cut yields were similar to the experimental diets. There was no effect of diets for loin measurements, but the vaiues of short iength and large fat thickness were increased. The proportions of muscle, fat and bone, muscle:bone ratio and chemical composition of Longissimus dorsi muscie were similar among cliets. in the fatty acid profile were observed positive linear effect for polyunsaturated fatty acids linoleic and linolenic, in total omega 3 and omega 6, and improvements in the ratio omega 6: omega 3. The protected fat can be used to feed Saanen kid goats as a sources for energy density of diet, and presents improvements in the performance, reduced days in feedlot with no effect on carcass characteristics and demonstrated improves in quality of meat.
