সংক্ষিপ্ত: | The cultural changes of the last decades have taken food services tation to occupy a prominent place in the food culture of individuals and the habit of having meals outside the home is increasingly common. (MACEDO; FALANI; NETO, 2015). In Brazil, the growth of meals outside the home is notorious (CLARO et al, 2014). This reality shows the increase in establishments that produce meals for immediate consumption across the country. Such locations include large-scale production units and types of organization with different types of services, such as shops, buffets, snack bars, fast food, cafes, bistros, restaurants, hotels and commercial restaurants (BEZERRA et al, 2017). |
