Sophorolipids by the Starmerella bombicola as sanitizer in carcass washing by aspersion and immersion in slaughtering and poultry processing.

Summary: This work aimed to apply sophorolipids produced by the yeast Starmerella bombicola, as a sanitizer, in the washing water of poultry carcasses, simulating stages of slaughter and processing by spray and immersion of birds against the microorganisms Staphylococcus aureus, Escherichia coli, thermotolerant coliforms and mesophilic aerobes. For this evaluation, solutions of sophorolipids at 500, 2,250 and 4,000 µg.mL-1 applied to verify the antimicrobial effect. The evaluated results demonstrated that the most significant reduction in spray the most significant reduction was obtained when the solution containing 4,000 µg.mL-1 was sprayed, with a reduction of 1.32 for S. aureus, 1.47 for E. coli, 1.43 for thermotolerant coliforms and 1 .05 for mesophilic aerobes. In immersion water, the sanitizing action gradually increased exposure time. There was a total reduction of viable cells at 90 minutes with 2,250 μg.mL-1 of sophorolipids and 30 minutes of exposure to the concentration of 4,000 μg.mL-1. Sophorolipids showed an innovative potential against contaminating microorganisms in the poultry industry, and could be a new sanitizing agent bringing greater food security to products of the poultry industry.

Para esta evaluación, se aplicaron la solución de soforolípidos a 500, 2.250 y 4.000 µg.mL-1 para verificar el efecto antimicrobiano. Los resultados evaluados demostraron que la reducción más significativa de la aspersión se obtuvo cuando se asperjó la solución que contenía 4.000 µg.mL-1, con una reducción de 1,32 para S. aureus, 1,47 para E. coli, 1,43 para coliformes termotolerantes y 1 .05 para aerobios mesófilos. En agua de inmersión, la acción higienizante aumenta gradualmente con el tiempo de exposición. Hubo una reducción total de células viables a los 90 minutos con la concentración de 2250 μg.mL-1 y 30 minutos de exposición a la concentración de 4,000 μg.mL-1. Los soforolípidos mostraron un potencial innovador contra los microorganismos contaminantes en la industria avícola y podrían ser un nuevo agente desinfectante que brinde mayor seguridad alimentaria a los productos de la industria avícola.Este trabalho teve como objetivo aplicar soforolipídios produzidos pela levedura Starmerella bombicola, como sanitizante, na água de lavagem de carcaças de frango, simulando as etapas do abate e processamento por aspersão e imersão de aves contra os microrganismos Staphylococcus aureus, Escherichia coli, coliformes termotolerantes e aeróbios mesófilos. Para essa avaliação foram aplicadas soluções de soforolipídios a 500, 2.250 e 4.000 µg.mL-1 para verificar o efeito antimicrobiano. Os resultados avaliados demonstraram que a sanitização por aspersão a redução mais significativa foi com a solução de soforolipídios a 4.000 µg.mL-1, com a redução de 1,32 para S. aureus; 1,47 para E. coli; 1,43 para coliformes termotolerantes e 1,05 para aeróbios mesófilos. Na água de imersão, a ação sanitizante aumentou gradativamente com o tempo de exposição. Ocorreu a redução total das células viáveis com 90 minutos com 2.250 μg.mL-1 de soforolipídios e com 30 minutos na concentração de 4.000 μg.mL-1.
